First up was a chick-fil-a grilled market salad with all the fixins and the apple cider vinaigrette dressing (blood sugar levels 82 1.5 hrs later) and then my chocolate banana protein smoothie that I have daily (74 1.5 hours later) -
So I'd say so far this is going well! Everyone's hormones respond differently to different foods and the only way to find out how your body reacts is to draw some blood and find out for yourself 💉 Spiking your blood sugar levels is one of the most unhealthy things you could do for your body. It can lead to insulin resistance, diabetes, weight gain, and heart disease to name a few. -

I gotta say when you get to eat delicious foods like this - egg, spinach and sun dried tomato pie with a sweet potato crust - you don't need to feel too deprived! Plenty of protein, good fats and veggies to nourish and feed your gut biome and boost your immunity. 
I've just started reading Michael Mosley's 'The Clever Guts Diet'. It's fabulous to see so much research going into the area of diet and gut health and how it impacts upon our health. The more public awareness around these issues the better. It's also heartening to see evidence supporting something Naturopaths and Nutritionists have long known - the gut is the seat of our health.

More inspiration from my daughter today who is managing her thyroid condition with the auto immune protocol diet. I gotta say when you get to eat delicious foods like this - egg, spinach and sun dried tomato pie with a sweet potato crust - you don't need to feel too deprived! I'm kind of shocked these photos are only 8 months apart! There is an 18lb / 8.2kg change between these photos. ⬇️ What the scale doesn't tell me is how much lean muscle I've gained, but I can tell it's there when I bench 70lbs when previously I struggled to lift a 10lb dumbbell. Oh lawddd, do I ever believe in this message now. 🙌🏼 I really want and hope for other women to experience the empowerment that comes from this positive lifestyle change like I have! 💖 Starve-yourself diets, excessive cardio and waist trainers are unlikely to transform your body safely and sustainably (shit bro I used to do the waist trainer thing too... little did I know it's a snake oil gimmick that preys perfectly on women's body insecurities 🙄😒). STRENGTHENING your body from the inside out, both physically and mentally, that's what will transform your body for the better. At least, that's what did it for me.

Ingredients: 
1lb cleaned, peeled, deveined shrimp 
Fresh Cilantro 
1/2 Tsp garlic powder
1 Jalepeno pepper
1 Lime
1 Tbsp Honey
1 Tbsp Siracha Chili sauce 
1/4 Ranch dressing
1 Tbsp olive oil
1 Tsp Paprika
Dash Salt & black pepper to taste 
1/4 Tsp Cayenne pepper
1 Tbsp Apple cider vinegar 
8 corn or whole wheat tortillas 
Directions:

1. Clean & peel shrimp. Place in fridge.

2. Make siracha sauce: mix siracha and ranch dressing and set aside.

3. Make cole lime slaw: dice jalepeno, mix with apple cider vinegar, honey. Add juices of half of the lime. Season with salt and pepper.

4. Season shrimp with paprika, cayenne pepper, garlic powder and salt & pepper. Mix well. 
5. Heat a large skillet on Med-High heat with olive oil. Cook shrimp until fully cooked.

6. Chop shrimp into smaller pieces and place on heated tortillas.

7. Top with siracha sauce and dress with cole slaw.

8. Top off with sliced lime and chopped cilantro 🍈🌿
